My mum used to say that breakfast is the most important meal of the day! Now we are eating healthy food, we have had to create a new weekend fry up that tastes delicious and is quick and easy to cook. Try this healthy breakfast for a change and I promise you won’t even miss your bacon sandwich!
Ingredients
Olive oil
1/2 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
2 garlic cloves
6 chestnut mushrooms
10 cherry tomatoes
1 avocado
Handful of spinach (optional)
Wholemeal bread
1 lemon
Method
Finely chop the garlic, slice the mushrooms and cut the tomatoes into halves.
Put 2 tablespoons of olive oil into a frying pan and add the cayenne pepper, oregano, thyme, garlic with a pinch of salt and pepper. Keep stirring on a medium heat for 2 minutes and do not burn the garlic!
Add the mushrooms and tomatoes and the lemon juice and cook for 4 minutes until the mushrooms and tomatoes are softened.
Stir in the spinach and leave for another minute.
Put a slice or 2 of bread in the toaster and when ready, pile on the vegetables and add sliced avocado on top of your (vegan) buttered toast.
Adapt
You can also try adding some vegan sausages or some tofu to make this a heartier breakfast.
