This is a perfect dish to make right now. It is quick and easy to make and tastes delicious. You can also adapt and use the ingredients you have in the fridge.
Ingredients
1 tablespoon of oil ( Groundnut or Rapeseed preferable)
1 teaspoon of fresh chopped ginger
2 garlic cloves
1 lime
1 lemongrass
Soya sauce
2 chillis (red or green fine) finely chopped
1 onion
Handful peas ( fresh is possible)
Packet of baby Sweet corn
Packet of Mange tout
1 yellow pepper
Handful edamame beans
1 finely chopped stick of celery
1 carrot finely chopped
3 Spring onions chopped
Packet of rice noodles
Tin coconut milk
Spring greens (Bok choi, cabbage )
400 ml vegetable stock
Method
Put a saucepan of water on the hob and boil the water. Once boiling, add the rice noodles and cook according to packet instructions. Drain in cold water and leave to one side.
Whilst the noodles are cooking, heat 1 tablespoon of oil in a wok or large pan.
Add the onions and cook for 4 minutes, add the chilli, garlic and ginger and continue stirring for another 3-4 minutes.
Add the vegetables and stir continually for 5 minutes. Add some soya sauce for flavour.
Next add the coconut milk and vegetable stock and keep cooking for 10 minutes.
Add the spring onions and noodles and heat through for 5 minutes.
Serve in bowls with fresh coriander, chopped chillis and a squeeze of lime juice.
