Don’t stress when it’s birthday time! You can still make delicious cakes without using eggs or butter! They taste lighter and fluffier! There are lots of recipes to try and adapt.
Please see an easy recipe to make cupcakes! These are so adaptable and you can adapt with different flavour combinations. Try adding cocoa powder or almond essence or blueberries!
Ingredients
220g plain flour
200g caster sugar
1 teaspoon baking powder
2 teaspoons vanilla extract
80ml olive oil (rapeseed also works)
1 tablespoon. vinegar
Icing/ decoration
200g Vegan butter (any plant based spread)
375g icing sugar
2 teaspoons vanilla extract
strawberries to decorate
Method
Heat oven to 180 degrees
Put all ingredients into a mixing bowl and combine. Be careful not to over mix the ingredients.
Once the mixture is combined, put into your cup cake cases and bake in the oven for 20 minutes.
Check the cakes are cooked thoroughly using a cocktail stick
Remove from oven and leave to cool.
Mix the butter, icing and flavouring in a bowl. I like to put in the fridge before piping for 10 minutes as the mixing process softens the butter.
Pipe the butter icing onto the cakes and decorate with half a cut strawberry. You can decorate to your own taste and my children love this part!
