This is such a quick and easy mid week meal that tastes delicious! The children can also help you and make their own pizzas! Be adaptable and use whatever you have in your fridge or cupboard!
Ingredients
1 roll puff pastry ( check no butter)
Olive oil
Tomato purée
Balsamic vinegar
Mixed Mediterranean herbs
Tin sweet corn
Black olives
2 fresh tomatoes
Few leaves basil
1 red onion
Method
Mix together 2 tablespoons of tomato purée with 1 tablespoon of balsamic vinegar and a teaspoon of Mediterranean herbs.
Take out the puff pastry and unroll onto a flat surface. Using a small sharp knife, carefully cut the pastry into 6 squares and move slightly apart leaving them on the parchment paper.
Lightly score around the edge of each square of pastry leaving a 1cm edge.
Using a spoon, put a thin layer of the tomato paste into each square, leaving the outer edge clear.
Put any ingredients into your pizza including thinly sliced red onion, sweet corn and slices of tomato and black olives.
Drizzle some olive oil over the top, season with salt and pepper and rip some basil leaves and place them on top of your pizza squares.
Cook in a pre-heated oven for 10-15 mins until the pastry has puffed around the edges.
Serve with a green salad

You can use anything you like on top of a pizza slice and also add vegan cheese!
